Hey-hey now… the holidays are coming! Are you excited?! If you’re anything like my family, you’ll fall into one of the two: either you can’t stand the idea of the holidays fast approaching and you cringe at the mere thought of holiday shopping OR you’re like me, filled with excitement and actually look forward to shopping, gift giving, and spending time with family over holiday meals. So which one are you?
It didn’t occur to me until after I took a step back, looked at the photos of this cake and thought to myself, “Wow, this reminds me of a snowy Christmas!” With cranberries and powdered sugar, how could I not have seen this before I started? I guess I may be a little early, (sorry to burst your bubble Grinch’es- lol) but I look forward to the holidays, the moment the sweater weather arrives.
But, if you’re in bit of a rut this year for shopping for the holidays or gift giving in general, I’ve got another cool giveaway for you and for the school of your choice. Enter in to win for yourself or as a gift to someone who’s a bakeaholic and coffee fanatic. He/she will love you for this. See below the recipe for additional details.
A lightly sweetened and tart cake with an irresistible crumb
- 1 cup granulated sugar
- 3/4 cup packed light brown sugar
- 1/2 cup vegetable shortening, softened
- 3 eggs
- 2 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/3 cups buttermilk
- 2 cups fresh or frozen cranberries
- confectioner's sugar (optional)
- Heat oven to 350 degrees F. Using baking spray with flour, generously coat bottom and sides of Simax glass bundt pan; set aside.
- In a large bowl using an electric mixer, beat sugars, shortening, and eggs together until just combined, about 1 minute. Mix in flour, baking powder, baking soda, salt, and buttermilk. Fold in cranberries and pour batter into bundt pan.
- Bake for 1 hour to 1 hour and 15 minutes or until a long toothpick inserted in center of cake comes out clean.
- Allow cake to cool in pan for 20 minutes before inverting cake onto a plate for additional cooling.
- Lightly sprinkle confectioner's sugar over cake before serving. ENJOY!
If using frozen cranberries, do not thaw. Remove from freezer when ready to fold into the batter.

Bake Your Bundt Off and WIN!
About a week ago, I received several gifts from an online retailer called, MightyNest. I’ve never heard of this company before so naturally, I looked into it and I was pleasantly surprised about their positive mission to provide natural, organic, and non-toxic products safe for family homes all while giving back to schools. Everything they sell is selected with the highest standards for safety and quality. To name a few they have, glass and stainless baking gear, food storage, green cleaning supplies, natural bath products, and other home essentials. In addition, every product is free from toxic ingredients such as: BPA, PVC, phthalates, lead, formaldehyde, flame retardants, parabens and more. I’m all about trying to stay green so when heard about this company, I just couldn’t pass up on this opportunity to share this bit of info with you.
But there was one item I received that I quickly fell in love with, it’s the Simax glass bundt pan. When I first held this pan in my hands, I immediately thought it was plastic. Turns out, it’s made of borosilicate glass and can withstand high temperatures of up to 572 degrees F, whereas tempered glass can go up to 425 degrees. Plus, did you know glass pans give a more even bake? Yep it’s true!
And if you’re a parent, get this… with every order from MightyNest, they give back 15% to the school of your choice? Talk about gift giving and support, this is awesome! So let’s talk about the actual giveaway, shall we? The bulleted list are some of MightyNest products in which you can enter in for your chance to win (a $100 value). And if you win, MightyNest will also give away $100 to the winner’s school! So, you can call it a $200 Giveaway! But don’t wait too late, this ends Nov.15th!
