If there is one thing I miss now that I have been in Arizona for a week, it’s my grandmother’s home cooking.  Each and every dish of hers never missed a beat in flavor.  But prior to my move back in with the family in late 2014, I was on my own and needed to cook for myself.  Truth be told, I didn’t cook all the time and the Seamless app and I became very close.  Now that I’m back out in the world “adulting” on my own again, ordering food in on a daily basis is not very feasible.  It gets expensive!  Plus, I didn’t always order smart choices.

Luckily, Bumble Bee (a brand I’ve worked with in the past) recently came out with a new line called Bumble Bee SuperFresh® which consists of 5 different naturally seasoned flavors of seafood.  (See product line image below.)

I am stoked Bumble Bee SuperFresh® is now on the market!  As someone who does not cook on the regular, may not have all the herbs and seasonings required, and is always on-the-go, this meal is surely a time saver!  There’s not much thinking involved.  Just pick the entrée you want, plate a side salad served with a any complex carb such as rice, corn or potatoes and your frozen seafood will be ready from start to finish in less than 30 minutes!  Now THAT is what you call, a 30-minute meal! (Something a should seriously start posting more of.)

And the flavor!  Oh. My. Goodness!  I have not had a good piece of salmon taste SO incredibly good in such a long time.  I’m a huge fan of garlic and black pepper and believe it, Bumble Bee SuperFresh® got it right with the right amount of pure and simple ingredients to let the salmon shine through.  The salmon itself, is flaky and tender, not dry like I’ve tasted in other places.  You are sure to get restaurant quality fish and because you bake this while the seafood is still frozen, there is no fishy odor lingering around or heavy breading or sauces either!

Garlicky Black Pepper Salmon and Oil with Seasoned Corn

Garlicky Black Pepper Salmon and Oil with Seasoned Corn

Ingredients

  • 1 package Bumble Bee SuperFresh® Garlicky Black Pepper Salmon with Oil
  • 2 cups fresh or frozen corn, thawed
  • 1 tablespoon salted butter
  • 1/3 cup parmesan cheese, grated
  • ¼ cup fresh parsley, finely chopped
  • salt and pepper to taste
  • 3 to 4 cups garden salad or any salad of choice
  • salad dressing of choice

Instructions

  1. Heat oven, prepare, and bake Bumble Bee SuperFresh® salmon as instructed on the back of the package.
  2. In a small saucepan, fill pot with 3 cups of water to boil. Add corn with butter and continue to boil for 5 to 7 minutes; drain. Place corn into a medium-sized bowl and mix in chopped parmesan cheese, parsley, and salt and pepper to taste.
  3. Serve about 1 cup of seasoned corn onto each plate with 1 salmon filet and a side of garden salad with dressing. ENJOY!
